The masterclass introduced students to a range of technical skills in order to create flourless chocolate cake, blackberry compote, yoghurt Chantilly cream with vanilla and crystallised chocolate soil.
The girls also got to taste samples of different types of chocolate made by new Falmouth chocolatiers, Rio Nuevo.
Mariana said: “For me, chocolate is the perfect ingredient. I love chocolate and I love working with it. Being a pastry chef is such a wonderful job, it’s like therapy with the joy of mixing and creating different flavours. I love the composition of desserts and, to me, pastry making is so much more complex than savoury cooking as everything has to be perfectly balanced.”
Mariana is the former Head Pastry Chef at Fifteen Cornwall. She trained at Le Cordon Bleu prior to working at Nuno Mendes (Chiltern Firehouse) and Fifteen London.
