‘Taste’ at Truro High will build on existing skills to prepare students for independent living and delicious dining. The programme is on offer to the school’s students in Year 12.

As well as equipping students with cookery skills for life and the ability to create high end luxury cuisine, they will also have the chance to take a ringside seat as some of Cornwall’s most influential chefs show them how to recreate culinary perfection.

This season’s guest chefs include Stephane Delourme, Head Chef at Rick Stein’s Seafood Restaurant for the last 21 years; Andy Appleton, former Head Chef of Jamie Oliver’s Fifteen Cornwall; Kate Attlee, Masterchef quarter finalist and Persian food specialist; Nick Evans, Head Chef Lecturer at Rick Stein’s Cookery School; Tom Hazzledine, Founder and owner of Baker Tom; and Mariana Chaves, Head Pastry Chef at Fifteen Cornwall and formerly Nuno Mendes (Chiltern Firehouse) and Le Cordon Bleu.

The programme is led by Good Schools Guide Gold award-winning Food teacher Mrs Lisa Van der Lem and Cordon Bleu-trained chef Mrs Fyonah Ferris.

Mrs Van der Lem said: “From menu planning and budgeting through to knife skills and food safety and hygiene, the programme will equip students for university and the culinary demands of life beyond. Whatever you want to do from cooking on superyachts to heading off as a ski season chalet girl, ‘Taste’ will provide the essential building blocks that every future master chef will need.”

As part of the course, students will receive a Level II Food Safety and Hygiene online examination, a ‘Taste’ at Truro High chef’s apron and a cookery portfolio containing recipes, planning and budgeting information and essential tips on safety and hygiene.

Following their final assessment, those who complete the course will be awarded a certificate signed by Rick Stein and all the course chefs to recognise their achievements.
